Here at Elusive Jams, we take pride in hand crafting our jams and jellies in small batches. I grew up making various jams, preserves and jellies with mom. If there is any fruit our area can grow the best, it’s figs, blackberries and pears.
I had been crafting my own jam recipes as a relaxing hobby for a few years. I officially started my business in 2018 when our Fig Bourbon Jam was featured on a local restaurant’s menu. They even named the “Elusive Burger” after us. That flavor went on to be a Flavor of Georgia Finalist and is still our best seller today.
In 2019 we purchased an old dairy farm in West Georgia. The fertile soil and Little Tallapoosa River provide excellent conditions for our orchard, vineyard and berry patch. As soon as we moved to the farm, we started planting varieties of pears, peaches, plums, persimmons, apples, cherries, pecans, blackberries, blueberries, raspberries, muscadines, elder berries and rare fruits like quince, pawpaws, loquats, currants, mayhaws, jujubes and a variety of peppers.
All of our flavors are seasonal and crafted by hand in very small batches. By keeping Elusive’s operations small, I can ensure integrity in every jar. Elusive Jams can only be found in the finest boutiques, wineries and restaurants across the southeast and I intend to keep it that way. This ensures our product line is rare, unique and premium quality.
