Nico, owner of Stardust Cellars, the largest wild fermentation meadery in the United States, presents a deep dive into the history and science of mead making. Known for artisanal, wild-fermented meads inspired by traditional methods, Stardust Cellars bridges ancient practice and modern craft. This class explores the global history of mead, from early hunter-gatherer societies through the Viking Age and into today. It looks at how different cultures worked with local ingredients and wild yeasts long before modern science, and how those traditions evolved over time. The session also breaks down the science behind meadmaking, including microbiology, fermentation, chemistry, and physics, and how these principles are used by modern meadmakers. A comparison will be made between today’s tools and knowledge and what would have been available during the Viking Age. The class is free for walk-ins. Nico, owner of Stardust Cellars, the largest wild fermentation meadery in the United States, presents a deep dive into the history and science of mead making. Known for artisanal, wild-fermented meads inspired by traditional methods, Stardust Cellars bridges ancient practice and modern craft. This class explores the global history of mead, from early hunter-gatherer societies through the Viking Age and into today. It looks at how different cultures worked with local ingredients and wild yeasts long before modern science, and how those traditions evolved over time. The session also breaks down the science behind meadmaking, including microbiology, fermentation, chemistry, and physics, and how these principles are used by modern meadmakers. A comparison will be made between today’s tools and knowledge and what would have been available during the Viking Age. The class is free for walk-ins. There will also be opportunities to ask questions about mead history, science, and running a modern commercial meadery.
